The Sazerac

Rye, a little sweetness, an anise rinse and the aromatic red dash that ties them together.

Makes one drink

What goes in

  • 2 oz rye whiskey
  • ¼ oz simple syrup (equal parts sugar and water)
  • 3 dashes Aromatic bitters
  • A small splash of absinthe, to rinse the glass
  • Lemon peel

How to mix it

  1. Chill a small rocks glass. Rinse the inside with a little absinthe, turn the glass to coat it, then discard the excess.
  2. Add the rye, syrup and bitters to a mixing glass. Fill with ice and stir until thoroughly chilled.
  3. Strain into the prepared glass without ice. Express a lemon peel over the surface for its oils.

The rinse should leave an aroma, not a pool. A chilled glass matters because this version is served without ice.
